01 - Combine pineapple chunks and lime juice in a blender. Blend until completely smooth and set aside.
02 - In a separate bowl, whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest until well combined.
03 - Alternate spooning layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer or thin knife to gently swirl the layers for a marbled effect, if desired.
04 - Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
05 - Briefly run the outside of the popsicle molds under warm water, then carefully remove popsicles. Serve immediately.
