Sweet pineapple, creamy coconut, and zesty lime swirled into frozen treats perfect for hot days.

# What You'll Need:

→ Fruit & Juice

01 - 2 cups fresh pineapple chunks
02 - 1/4 cup fresh lime juice

→ Coconut Mixture

03 - 1 cup full-fat coconut milk
04 - 1/4 cup coconut cream
05 - 3 tbsp maple syrup or honey
06 - 1 tsp grated lime zest

# How to Make It:

01 - Combine pineapple chunks and lime juice in a blender. Blend until completely smooth and set aside.
02 - In a separate bowl, whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest until well combined.
03 - Alternate spooning layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer or thin knife to gently swirl the layers for a marbled effect, if desired.
04 - Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
05 - Briefly run the outside of the popsicle molds under warm water, then carefully remove popsicles. Serve immediately.

# Expert Advice:

01 -
  • The creamy coconut milk balances the sharp tang of pineapple perfectly.
  • It comes together in minutes but tastes like a fancy spa treat.
02 -
  • Filling molds too full causes cracking when the liquid expands.
  • Running the molds under water for too long will melt the edges too fast.
03 -
  • Chill your coconut milk in the fridge overnight for an even creamier result.
  • Taste the pineapple puree before adding sweetener to avoid cloying pops.
