Crispy Zaatar Pita Chips (Print Version)

Crispy oven-baked pita triangles coated in fragrant za'atar spice, ideal for snacking or pairing with your favorite dips.

# What You'll Need:

→ Pita Chips

01 - 4 whole wheat pita breads

→ Za'atar Topping

02 - 3 tbsp olive oil
03 - 2 tbsp za'atar spice blend
04 - 1/2 tsp sea salt

# How to Make It:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - Cut each pita bread into 8 triangles. If using thick pita, separate into single layers for extra crispiness.
03 - In a small bowl, combine the olive oil, za'atar spice blend, and sea salt. Mix well.
04 - Brush each pita triangle lightly with the za'atar oil mixture on one side.
05 - Arrange the brushed pita pieces in a single layer on the prepared baking sheet.
06 - Bake for 10 to 12 minutes, flipping halfway through, until golden brown and crisp.
07 - Remove from oven and let cool before serving.

# Expert Advice:

01 -
  • These chips turn stale or leftover pita into something genuinely addictive in under 25 minutes.
  • The za'atar mixture works as a finishing oil for almost anything, so you will find excuses to make extra.
02 -
  • Watch the chips closely after the 8 minute mark because za'atar burns quietly and tastes very bitter when it does.
  • Separated single layer pita chips bake faster than double layer ones, so if you mix them on the same pan some will overcook.
03 -
  • Brush the pitas from the edges inward because the tips burn first and need the least oil.
  • If your za'atar blend already contains salt, cut the added salt in half or skip it entirely.
