01 - In a medium mixing bowl or mason jar, thoroughly combine rolled oats, milk, cooled brewed coffee, brown sugar, Greek yogurt if using, chia seeds if using, vanilla extract, and a pinch of salt until well blended.
02 - Cover the container and refrigerate for at least 8 hours, allowing oats to fully absorb liquid and flavors.
03 - In the morning, stir the chilled oat mixture thoroughly. Add a splash of milk if a creamier consistency is desired.
04 - Divide chilled oats between two bowls or jars. Top each serving with sliced banana, chopped toasted nuts, and additional brown sugar or maple syrup as preferred.
05 - Serve immediately and enjoy chilled.
